From 14 to 16 November 2025, the historic centre of Conversano will come alive with scents, sounds and flavours as it hosts the 15th edition of ‘Novello sotto il Castello’, one of the most eagerly awaited autumn events in Puglia.

An event that celebrates the tradition of Apulian novello wine, but does so with a contemporary twist, blending culinary cultures, musical performances and creative innovation. Three days of festivities, tastings and music, during which the city becomes a hub of sensory experiences.

A journey between taste and sound

At the heart of the event are the Apulian winemakers, with their finest novello wines, and culinary artisans from every corner of Italy. Over 70 key players – including producers, wineries, chefs and food trucks – are ready to take visitors on a journey through authentic flavours and intense aromas.

Alongside the glasses of wine, there is a carefully curated selection of signature street food, showcasing Italian cuisine in all its nuances: from reimagined regional traditions to culinary innovation.

A multisensory experience

. The best time to soak up the atmosphere is between 6.00 pm and 8.00 pm. The lights come on, it’s less crowded, and you can take your time exploring the wine and food.

. During the Novello sotto il Castello festival, the historic centre is partially closed to traffic. Here are some recommended places to park:

• Car park in the Piazza Aldo Moro area: spacious, close to the town centre and within easy walking distance
• Via Giuseppe Bolognini: a street with several parking spaces available
• Conversano Railway Station car park: convenient if you’re arriving by train or from outside the town
• Car parks at Liceo Morea (Via Gallo): close to the city centre and often free
• Via San Giacomo car park: further away, but a good option when it’s very busy
